    Japanese artist Toshihiro Kushizaki has released the Pixel Art Shader: a free Blender shader that should convert any 3D model into old-school pixel art.

    I developed my own method for doing this which at one time involved the use of several programs. As I found out you can basically render a model at something like 1024x768. Then take the .png image into something like Image Analyzer, then scale it down with Pixel resize (no scaling), and you should get decent results.

    I also remember a old version of Game Maker had a decent image editing utility built within it that was useful more making graphics look PIXELY. :D
